Lasagna Rolls



This is a very easy dish to make and it works great for leftovers, as well.  This recipe is vegetarian, but you can easily add meat to the mixture, if you want.

1 package of lasagna noodles (I use the wheat noodles)
2 cups part skim ricotta cheese
1 10oz package of frozen chopped spinach, completely drained (needs to be pretty dry)
1 egg
Fresh herbs, as desired (basil, oregano, etc...)
Pasta sauce
Shredded mozzarella

Preheat the oven to 350 and cook the noodles.  Mix the egg, ricotta, spinach and herbs in a large bowl.  In a 9x13 baking dish, spread a thin layer of the pasta sauce.  Put the cooked noodles on wax paper and pat them dry with a paper towel.  spoon about 1/4 cup or so of the mixture into each noodle, roll it, place it seam side down in the baking dish.  When the dish is full, pour a little of the pasta sauce over each roll and sprinkle mozzarella.  Cover with foil and cook for about 30-40 minutes or until rolls are cooked through.

Note - I didn't cover it with foil and it turned out ok.
