Basil Jack Meatloaf

1 pound ground beef
1 cup ketchup, divided
1 cup breadcrumbs
1/2 red onion , chopped
3/4 cup fresh basil, chopped
1 cup Monterey Jack cheese, shredded
2 large eggs
1 teaspoon garlic, minced
olive oil cooking spray

Makes 4 servings. per serving: 498 calories; 40 grams protein; 23 grams total fat; 2 grams fiber; 10 gram saturated fat; 33 grams carbohydrates; 201 mgs cholesterol; 1166 mgs sodium

Preheat oven to 400 degrees.

[1] Combine the ground beef, half of ketchup, breadcrumbs, onion, basil, cheese, eggs and garlic. Mix well. Coat a loaf pan with cooking spray. Shape the meat mixture into a loaf to fit into pan.

[2] Spread remaining ketchup over the top of the meatloaf and bake for 45 minutes or until thoroughly cooked. Let stand for 10 minutes before slicing and serving.
