Cajun Shrimp with Old Bay Mayonnaise

Quick, easy, and low on points! :) This is also adapted from the Wei.ght Wat.chers Pure Com.fort cookbook.

Ingredients:
3/4 C fat-free mayonnaise
1 green onion (scallion), finely chopped
1 garlic clove, minced
2 tsp fresh lemon juice
3/4 tsp Old Bay seasoning
1 lb peeled and deveined shrimp
1 1/2 tsp Cajun seasoning
2 tsp olive oil

1) Combine the mayo, green onion, garlic, lemon juice, and Old Bay seasoning in a small bowl.

2) Combine the shrimp and Cajun seasoning in a medium bowl.

note: usually we just put the shrimp on skewers and grill them, but step 3 is straight from the cookbook if you want to use this method. The points value shown is for cooking in the oil, so it might be slightly lower if you grill.

3) Heat the oil in a large nonstick skillet over medium-high heat. Add the shrimp and cook just until lightly browned and opaque, 1 1/2 - 2 minutes on each side.

Serve with the mayonnaise.
